Quick and Easy Pancakes

My mom recently passed away. The one memory I will always have is how she instilled in us the importance of a good breakfast. As children, before getting dressed for school, we were to eat a hot breakfast. When my girls were young, I decided to instill in them the same. Until now (they make their own breakfast now), I made sure the first thing they did when they woke up was eat a good breakfast. My girls favorite – chocolate chip pancakes.
Although there are many quick, ready-made pancake mixes, I found this easy recipe in an old Bell's Best Cookbook. It is one we all know from heart, even the girls. My youngest learned how to make her own pancakes in elementary school and still makes them for her friends when they come over.
Although we love chocolate chips in our pancakes, feel free to experiment. Enjoy!

Equipment

  • griddle cook however you want…we like our griddle

Ingredients
  

  • 1 cup self rising flour
  • 1 cup milk If you do not have any milk, substitute powdered milk (1/3 powdered milk to 1 cup of water)… powdered milk is great to have on hand
  • 1 egg
  • 3 tbsp oil I use whatever I have (I have used olive oil)
  • chocolate chips (optional)

Instructions
 

  • Stir in all ingredients except add-ins (like chocolate chips).
  • Stir in chocolate chips.
  • Drop onto griddle and cook until bubbly. Flip. Flip again (we keep flipping until outside is crispy but not burned).

Notes

If batter is too thick, add a drop of water/milk. If batter is too runny, add a little more flour. There is no way to do this batter incorrectly unless you use all-purpose flour. If you use all-purpose flour, be sure to add the correct amounts of baking powder and salt.
