Maison Kayser’s French Pastry Workshop and Macarons
Yesterday, my 13-year old found a macaron recipe off a recipe app. I told her if we are going to make macarons, we are going to find a recipe from one of my French cookbooks. After much thought, I knew this was the cookbook I wanted to use – Maison Kayser’s French Pastry Workshop cookbook.
Flashback…In 2017, a friend and I were in NYC (Brooklyn) for the Council on Economic Education national convention. Before the convention, we had a few fun days in Manhattan. We happened to come across this little bistro place close to our hotel room – Maison Kayser. We decided to do breakfast there our last morning in Manhattan. It was so delicious!

Upon returning home, I ordered Eric Kayser’s cookbook. After some research, I learned this was not a pastry shop but a boulangerie (type of bakery). In 2018, I was in D.C. for Mount Vernon’s Teacher Institute. Prior to the institute, I explored some in D.C. I was so excited when I realized there was a Maison Kayser close to the National Mall, so, of course I enjoyed breakfast there. I wanted to take my girls there in 2019 but didn’t have time to fit it in.

Back to present day… MT and I spent today working through his macaron recipe. I had only tried this recipe once which did not turn out quite so well. Today, however, the end result turned out better! After my first attempt, I had bought a macaron silicone mat and an icing “squeezer” (supposed to be easier than the bag). We realized today, though, that the mat and the “squeezer” did not work as well as the parchment paper and normal bag. We also realized that the macarons did not rise as well on a silicone mat.
We are sort of pumped that these turned out as well as they did. We are now looking forward to trying some different combinations, like the lavender one I had in Georgetown!!!!

This is a great French pastry cookbook. It walks you through step by step, INCLUDING PICTURES!!!!! That is my favorite part – each step with a picture! I have not tried any of his other cookbooks but he has many!
